Orange olive oil cake recipe
Ingredients (8 to 10 servings):
- 1 ½ cups all-purpose flour
- ½ cup baking powder
- ⅔ cup Italica Extra Virgin Olive Oil
- 3 large eggs
- ¾ tsp salt
- ¼ tsp baking soda
- ⅔ cup orange juice (approx. 2 oranges)
- 2 tsp orange zest
- 1 ¾ cups sugar
- Confectioners’ sugar to taste, for dusting
- Ground almonds to taste, for dusting
Bakeware:
- 9 inch springform pan
- 2 medium sized bowls to mix
- A larger bowl to mix
- A hand mixer
Directions:
Preheat oven to 325º F. Line the springform pan with some parchment paper and spray some olive oil.
Hands-on! In a medium sized bowl, whisk together flour, baking powder, baking soda and salt.
In the larger bowl, beat eggs and gradually add sugar. Beat until the mix gets thicker and looks yellowy.
In another medium sized bowl, add orange zest, orange juice and olive oil. Add the mix to the larger bowl with the egg mixture. Add the flour mixture to this bowl. Mix well with the hand mixer.
Time to bake! Transfer batter to prepared pan and bake for 45-60 minutes, 325º F. We recommend setting a timer for 45 minutes and checking the cake periodically.
Once it looks perfectly baked, allow the cake to sit in the pan at room temperature for 10 minutes, and then remove the sides of the pan and let cool for at least 15 minutes more.
Finally, dust top of cake with confectioners’ sugar and ground almonds. Enjoy!
*Chef’s Tip*
You can add 1 tsp vanilla extract to the olive oil, orange zest and juice mixture. The orange olive oil cake will have an even nicer taste.
