How to make this vegan olive oil cake recipe
Ingredients (makes 4 servings)
- 1 ½ cups all purpose flour
- 1/2 cup sugar
- 2 Tbsp almond flour
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1 cup almond milk (sugar-free)
- 5 Tbsp Italica extra virgin olive oil
- Juice of 2 lemons
- 1 lemon for decorating
- Large loaf pan: 8 1/2″ x 4 1/2″ x 2 1/2″
First, preheat the oven to 350° F. In the meantime, use a brush to grease the baking dish with a thin layer of olive oil, and begin preparing the ingredients.
Next, sift together the flour, sugar, almond flour, baking powder and baking soda in a medium bowl. Set aside.
In a separate bowl, add the almond milk, Italica extra virgin olive oil and lemon juice. Carefully fold the contents of the first bowl (flour, sugar and baking powder/soda) into the second bowl, mixing well to remove any lumps.
Pour the batter into the baking pan and spread evenly. Bake for 35-40 minutes in a 350° F oven.
Insert a toothpick to check whether the vegan olive oil cake is ready. If the toothpick comes out clean, the cake is done. It can now be taken out of the oven and set aside to cool.
Decorate your vegan olive oil cake
Ingredients for the glaze
- 3/4 cup powdered sugar
- 1 tsp lemon juice
- 3 Tbsp soy milk
A glaze is the perfect way to give the cake a special touch. In this case, we suggest using a lemon glaze, which is one of the easiest alternatives.
How to prepare a glaze for our olive oil cake? Simply whisk the ingredients (lemon juice, powdered sugar and soy milk) until the desired consistency is reached. For a thinner result, simply add one or two tablespoons of soy milk.
Use a brush to spread the glaze all over the cake. Finish decorating the cake by arranging thin lemon slices on top. Wait approximately 20 minutes for the glaze to thicken and the vegan olive oil cake is ready.
