Let’s talk about desserts, or rather, let’s talk about THE DESSERT! Olive Oil Brownies!

Olive oil brownies may not be the most famous dessert in the world… but today we’re going to transform a classic recipe for this sweet bite into something much more delicious and healthy, and one of the key ingredients happens to be olive oil. 

We’ll then use those brownies as the base for three delicious and original recipes that show the versatility of this popular dessert. Can you make brownies with olive oil? Stick around and read our recipes to learn not only how to make them but also how to enhance them.

Olive oil brownies

Ingredients (makes 4 servings):

  • 4 oz chocolate (70% cocoa) 
  • Almost 1/2 cup Italica extra virgin olive oil
  • 1/2 cup all purpose flour 
  • 1 tsp baking powder 
  • A pinch of salt 
  • 3 large eggs 
  • 3/4 cup of sugar 
  • 1 tsp vanilla extract

Directions

First, melt the chocolate in a double boiler. To do so, heat a pot with water on medium heat, without bringing it to a boil, and place a metal, ceramic, or glass bowl on top in such a way that it does not touch the water (make sure the bowl fits right on top of the pot, so it creates a seal). Next, place the chocolate in the bowl and stir with a rubber spatula until completely melted. Finally, add all the oil, mix thoroughly, and set aside to cool at room temperature.

In another bowl, add the flour, baking powder and salt. In a third bowl, beat the eggs and sugar. 

Combine all the ingredients and add the vanilla. Mix the eggs and chocolate thoroughly, and then slowly add the flour. This can be done using a hand mixer on low speed for a uniform consistency.

Lastly, line a baking dish (9×13″) with parchment paper and a thin layer of oil. Preheat the oven to 356° F and bake for 20-22 minutes. 

*Chef’s tip*

Insert a wooden skewer or the tip of a knife to check to see if the brownie is done. It should come out clean, but a little moist.

Once our olive oil brownies are cooled, simply cut them into squares and they’re ready to be upgraded. 

 

With a chocolate glaze

Ingredients

  • 1⁄3 cup powdered sugar 
  • 1.5 Tbsp butter (at room temperature) 
  • 1 Tbsp cocoa powder 
  • 1 tsp vanilla extract  
  • 1.5 Tbsp water
  • 3 Tbsp chocolate sprinkles 

Directions

Sift the powdered sugar and cocoa powder into a bowl. Add the butter, vanilla extract and water, and mix thoroughly. Pour over the brownie (you can use a pastry brush) and top with chocolate sprinkles. 

 

Brownie-Cheesecake

Ingredients

  • 7 oz cream cheese 
  • 3 individual plain yogurts (1 and 1/2 cup of yogurt) 
  • 2 eggs 
  • 3 Tbsp corn starch 
  • 1/2 cup sugar

Directions

This recipe is the easiest to make. Place all the ingredients in a bowl (in the same order as the list) and beat thoroughly by hand. 

Pour the mixture over the olive oil brownies in the baking tray before baking them. Use a spatula to swirl the chocolate and cream cheese batters. 

Place in the oven and bake for 30-35 minutes at 356° F. Check to see if it’s done using the method described earlier, and enjoy!

 

A healthy touch of ice cream!

Ingredients per serving

  • 1 ripe banana
  • 1 individual plain yogurt (1/2 cup)

Directions

Can I use olive oil in brownies? We have shown that the answer is yes, and now it’s time for another surprise in this post: we’re going to use ice cream to accompany our olive oil brownies.

First, use a fork to mash a banana in a bowl. Then, add the yogurt and mix thoroughly. Finally, freeze the mixture for at least 2 hours.

To serve, scoop the mixture on top of the brownie, and feel free to add nuts, coconut flakes, or anything else that comes to mind to upgrade your brownie!
