Ingredients (makes 1 serving)

  • ½ zucchini
  • ½ onion
  • ¼ red pepper
  • ¼ green pepper
  • 1 medium-sized bowl of mushrooms (4 oz.)
  • 1 carrot
  • 1 chicken breast
  • 1 dash of white wine
  • 1 drizzle of Italica Olive Oil

Keep in mind that the measurements we have listed are just a guide. You can alter the quantities according to your preferences. Sautés are perfect for experimenting, so people who love to improvise in the kitchen will like this recipe.

This easiest vegetable and chicken stir fry recipe yields one serving and takes less than 30 minutes to make, but you can multiply the quantities based on your number of guests. First, wash and peel all the vegetables. Then dice them. Cut the chicken into strips or cubes, whichever you prefer.

Heat a skillet on high and add the onion to lightly fry it. When the onion is more transparent, add the green pepper, red pepper and carrot, along with a drizzle of olive oil, and stir.

Once the vegetables are lightly browned, add the zucchini and mushrooms and continue stirring. When the mushrooms begin to brown, add the chicken and continue stirring. Finish it off with a dash of white wine for the perfect touch, and the sauté is done once the chicken is cooked through and no pink shows (~10 minutes).

For an extra burst of flavor, season with salt and pepper to taste while the ingredients are in the skillet, especially before adding the chicken so the flavors develop that much better.

 

Vegetable stir fry recipe

If we think of how to make a healthy stir fry, vegetables oftentimes come to mind, especially when we have vegan or vegetarian guests. We’ll help you prepare a vegetable stir fry recipe for four:

 Ingredients (makes 4 servings)

  • 2 carrots
  • 1 green pepper
  • 1 red pepper
  • 1 small head of broccoli
  • 1 garlic clove
  • ½ onion
  • 1 cup green peas
  • Italica Olive Oil
  • Salt
  • Black pepper

Directions

First, thoroughly wash all the vegetables and peel the carrots, onion and garlic. Seed the pepper and slice it into strips of similar size, and do the same with the carrots. Dice the onion and garlic, and cut the broccoli into smaller pieces.

Heat a skillet on medium and add a generous drizzle of olive oil. Add the carrots, peppers and broccoli, and cook for five minutes. Be sure to continuously stir the vegetables while cooking so they don’t burn.

Add the onion, garlic and green peas, and continue sautéing for a couple of minutes. Season with salt and pepper, and continue cooking on low heat for a couple of minutes.

You can use olive oil or extra virgin olive oil to sauté, although on this occasion we recommend Italica EVOO. This will result in a more intense flavor that goes perfectly with the vegetables.
