Sour cream recipe

Ingredients (12 servings)

  • 1 cup Italica Olive Oil
  • 5 Tbsp red wine vinegar
  • ¼ cup heavy cream
  • 1 ½ tsp salt
  • ½ tsp mustard powder
  • ¼ cup white sugar
  • 2 tsp fresh parsley, minced
  • 1 garlic clove, chopped
  • 1 pinch of ground black pepper

Directions

To make the sour cream that will make our mashed potatoes even tastier, simply place all the ingredients (olive oil, vinegar,  heavy cream, salt, mustard, sugar, parsley, garlic, and black pepper) in a medium-sized bowl and whisk or use a hand-blender until completely blended. 

Next, allow to cool in the refrigerator for at least six hours. Once it is chilled, serve and enjoy!

*Chef’s tips*

If the flavor is too strong for you, it can be easily corrected by adding more heavy cream to balance the vinegar and mustard.

If it is thicker than what you would like, add ¼ cup of milk and whisk until an even consistency is reached.

The sauce can be refrigerated in an airtight container for up to one week. Please note that sour cream should not be frozen because it does not thaw well.
