Pasta with olive oil, tomatoes, basil and mozzarella is the perfect summer recipe, thanks to its minimalist effort and maximum freshness.

It’s fast and easy to make pasta with olive oil, tomatoes, basil and mozzarella, thanks to the short cooking time and essential ingredients that are needed. To top it off, some of the ingredients are added according to personal preference. So make your personalized pasta with olive oil, tomatoes, basil and mozzarella recipe!

Ingredients (makes 4 servings):

  •  1 lb. spaghetti
  • 4-5 cups cherry tomatoes (about 24 oz.)
  • ½ cup fresh basil 
  • Fresh mozzarella, 8 ounces or to taste
  • 1 clove garlic, minced
  • ¼ cup Italica Extra Virgin Olive Oil
  • Salt and pepper to taste

Directions:

First, in a pan, heat the olive oil over medium heat and add the garlic (minced), then add the cherry tomatoes and a pinch of salt. Sauté for about 15 minutes, until the tomatoes are tender.

Next, cook the pasta in plenty of water with a pinch of salt for the amount of time indicated on the package. This step will take between 10 and 12 minutes.

Once it’s ready, drain the pasta and empty it in the pan with the tomato sauce, and sauté for 2-3 minutes, mixing well.

Lastly, stir thoroughly, adding the basil, salt and pepper to taste, and mozzarella (previously cut in pieces).

Ta-da! Our pasta with olive oil, tomatoes, basil and mozzarella recipe is ready.

*Chef’s tip*

Instead of adding the pasta in the “sauce” while it’s hot, try to toss it at room temperature so the ingredients cool off a bit. This recipe creates a just-warm and not-too-hot meal on a night when other pasta dishes may sound a bit too cozy, which is perfect since you’ll want the most flavorful, juiciest, ripest, in-season tomatoes you can find.
