It’s fast and easy to make pasta with olive oil, tomatoes, basil and mozzarella, thanks to the short cooking time and essential ingredients that are needed. Ingredients (makes 4 servings):
- 1 lb. spaghetti
- 4-5 cups cherry tomatoes (about 24 oz.)
- ½ cup fresh basil
- Fresh mozzarella, 8 ounces or to taste
- 1 clove garlic, minced
- ¼ cup Italica Extra Virgin Olive Oil
- Salt and pepper to taste
First, in a pan, heat the olive oil over medium heat and add the garlic (minced), then add the cherry tomatoes and a pinch of salt. Sauté for about 15 minutes, until the tomatoes are tender.
Next, cook the pasta in plenty of water with a pinch of salt for the amount of time indicated on the package. This step will take between 10 and 12 minutes.
Once it’s ready, drain the pasta and empty it in the pan with the tomato sauce, and sauté for 2-3 minutes, mixing well.
Lastly, stir thoroughly, adding the basil, salt and pepper to taste, and mozzarella (previously cut in pieces).
