Can you use olive oil for pancakes?
Although pancakes are usually made with butter, there is a healthier alternative. By substituting the butter with Italica olive oil, the results will also be fluffier.
How to make olive oil pancakes
Ingredients
- 2 eggs
- 1 ½ cups milk
- 2 cups all-purpose flour
- 2 tsp sugar
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 Tbsp Italica olive oil
Directions
Place and sift together all the dry ingredients (flour, sugar, baking powder, baking soda and salt) in a large bowl. Set aside.
In a separate bowl, add the milk, eggs and olive oil, mixing well to create a uniform consistency.
Once the two mixtures are ready, the next step is to combine them. Slowly add the liquid ingredients to the dry ingredients. It is very important to continue whisking while combining the ingredients because this will prevent lumps, although it’s fine if a few remain. You can stop mixing once all of the ingredients have been combined. The batter must have a liquid yet somewhat dense consistency.
Drizzle a few drops of olive oil in the skillet to keep the pancakes from sticking. Remember, just a few drops! Once the skillet is ready, it’s time to cook the pancakes. This is done little by little: one pancake followed by another, until all of the batter has been used up.
Pour a small amount of batter into the skillet and flip it over once small bubbles begin to appear. Repeat the process with the remaining pancakes until there is no more batter.
When the pancakes are ready, finish them off with the topping of your choice: syrup, honey, chocolate, etc. Whatever you prefer! You can even eat them without a topping: olive oil pancakes have a creamy consistency on their own.

When you drizzle a few drops of olive oil in the skillet, you can use a paper towel to spread it out evenly so the pancakes cook better.
