Can you use olive oil instead of butter in cookies? Of course! In fact, olive oil cookies are one of the best options to enjoy a delicious snack that is both quick and easy to make. Check out this chocolate chip cookie recipe and make the snack that you deserve!

Chocolate chip cookie recipe with olive oil

Ingredients

  • 1 cup Italica Olive Oil
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 teaspoon salt 
  • 2 large eggs
  • ½ teaspoon baking soda
  • 2 teaspoons pure vanilla extract
  • 2 cups of your favorite chocolate chips (semisweet or dark chocolate)
  • 1 teaspoon sea salt flakes for sprinkling on top of cookies

Directions

First, preheat the oven to 350º F and cover the baking sheet with parchment paper.

Next, we get down to work: let’s start with the dough! In a large bowl, mix the following ingredients: Olive Oil, vanilla extract, both sugars and salt. Add the eggs and beat manually or with the help of a mixer until it is completely homogeneous. Then, add flour and baking soda and beat again. Last, add chocolate chips.

Now, the fun part: shaping the cookies! With two spoons, shape and place the dough of each cookie on the baking sheet, leaving approx. 2-inches between them. Use your hands to flatten them gently. To make the shape, you can also use molds of different sizes or make special shapes, such as hearts.

Bake for 10 to 15 minutes. This is an estimated time: keep an eye on them, when you notice that they are golden around the edgeThey will be ready! Immediate sprinkle flaky sea salt on top of your cookies!

Remove from oven, and let cool on baking sheet 5 minutes until they cool completely. Time to eat!

*Chef’s Tip*

To get the shape right, before baking, once the cookie dough is on the baking sheet, flatten it. This dough is different, looser from the classic butter dough.
Also, if you chill the dough before baking for an hour in the refrigerator, the dough becomes more consistent.

Healthy cookies with olive oil

Replacing butter with the benefits of oil is already a big step, but if you want to give this recipe a healthier touch, you can use a higher quality oil such as Italica Extra Virgin Olive Oil.

However, the best thing would be to considerably reduce the amount of sugar and use dark chocolate chips.

We can also replace all-purpose flour with almond flour at a 1:1 ratio. As this is gluten-free flour, if there is any celiac, you will avoid any problem. Check that the rest of the ingredients are also gluten-free and enjoy!
