Fajitas recipe

Ingredients
- 2 boneless chicken breasts (i.e. about 1 pound)
- 1 onion
- 1 red or green pepper
- 4 corn or flour tortillas
- 1 tsp paprika
- A pinch of cumin
- 1 lime
- A drizzle of Italica Olive Oil
- Salt
- Pepper
Directions
The first step is to cut the chicken, the onion and the bell pepper into strips. Once they are cut, add these ingredients to a bowl together with the cumin, the paprika and the juice of half a lime. To finish, add salt, pepper and a dash of olive oil.
The second step is to heat the olive oil in a frying pan over medium heat and, when it is hot, add the chicken, the onion and the bell pepper already seasoned. Stir everything well for about ten minutes. We will know when the food is ready when it starts to brown.
Finally, we heat the tortillas in the microwave for one minute (although this may depend on what the manufacturer indicates). When everything is ready, we serve it separately: on one side the tortillas and on the other side the mixture, so that everyone can serve what he/she prefers.
To complete the fajita, place the chicken, bell pepper and onion on top of the tortillas and roll it into a tube shape.
Chef’s Tip
The best thing to accompany your fajitas are sauces. We recommend using guacamole, yogurt or tomato sauce, but fajitas work with any kind of sauce, so let your imagination run wild!

Baked potatoes recipe
Baked potatoes are the perfect side dish for any pan-cooked steak. Since this recipe may be prepared in the microwave, it is a very fast and easy to do!
Ingredients
- 1 medium-sized potato per person
- 1 Tbsp Italica Extra Virgin Olive Oil
- Sea salt
- Sweet paprika
- Garlic powder
- Water
Directions
First, wash the potatoes well. This point may seem silly but it is an important step since we are going to cook the potato with the skin on. You can use a brush to help remove the dirt and leave the potatoes very clean.
Then, cut the potatoes in half lengthwise and make shallow cuts with a knife on the side of the potato. Important: you should not reach the edges. Simply a few cuts that cross the potato without reaching from one end to the other.
We use a container with a lid that is suitable for microwaves and we add half a glass of water and the two halves of the potatoes skin-side down. When we have it ready, we sprinkle each half of the potato with a spoonful of extra virgin olive oil. Also a pinch of coarse salt, sweet paprika and garlic powder.
Close the container and cook the potato for 8 minutes at full power. The cooking time will depend on the type of microwave you have, so you will also have to calculate as you are making the recipe. How to check it? By pricking the potato with a knife. If the potato is still hard, continue cooking in 2 minutes increments to avoid overcooking. We will know that they are well cooked when we prick it and the knife enters without resistance.
Chef’s Tip
Instead of adding sweet paprika, you can try another spice of your choice to give it a different touch. Variety is the spice of choice!
